This is a speedy mega chicken salad that I make frequently for quick meals - hence why it’s made with my favourite veg that I always have with my standard “go to” dressing. I like adding a good punch of flavour by using a load of dried herbs, though you could easily use fresh if you prefer. . Also, it’s made with a store bought rotisserie chicken. There is no shame buying a cooked chicken! Nowadays they are really good qual
